We’re on a Dino high today from yesterdays trip to Jurassic Quest! We were invited to check out a drive through Dinosaur experience at the Pasadena Rose Bowl. They have over 80 true to life size dinosaurs that are museum quality. As you slowly drive through, you listen to an audio tour and it was just fantastic. Jurassic Quest travels nationwide! I’ll leave the website here so you can check out locations near you.

We had such a great time, I thought for lunch today, I would make the kids favorite… Dinosaur Soup! Its a thing here. We love dinosaurs and soup happens to be my kids favorite and really only way that they will eat vegetables! Levi is one of the pickiest eaters there is, why he accepts veggies in soup and no other way, I don’t know. There has to be some scientific reasoning, but I wont bother with that. I just make the soup and revel in the asking for seconds and the clean empty plates. Dinosaur soup is very simple to make. and you can recreate it in any pasta shape that you prefer! I also alter it depending on the season… since Valentine’s Day is coming up, I cut the carrots into hearts using a small cutter set I bought years ago. During Halloween, I might cut the carrots into pumpkins! I just love customizing it and making their mealtimes fun and playful.

Dinosaur Soup

A quick and easy soup base that delicious and kid friendly. Easily customizable to make it fun and festive!
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Course Soup

Equipment

  • Pot

Ingredients
  

  • 1 package Dino shaped pasta or any other
  • 1 tbsp ghee or oil of choice
  • 2 carrots wider carrots yield the best shapes!
  • 1 cup frozen green beans small cut
  • 1 clove garlic (whole)
  • 1/4 onion (large pieces)
  • 1 tsp salt
  • 4 tsp better than bullion
  • 32 oz water

*alternate to bullion and water

  • 32 oz broth of choice bone, chicken, beef or vegetable

Instructions
 

  • Cook pasta following instructions for an "al dente" finish, or one minute less that the final cooking time. Drain and let sit.
  • While the pasta is cooking, gather veggies. Peel and slice carrots into rounds using cutters on the larger rounds to make desired shape. This is totally optional! The soup will still taste good without it!
  • While the pasta drains, in the pot where you cooked the pasta, heat to medium high and add a 1 tbsp ghee or oil of choice. add in large pieces of onion and garlic. Let cook for one minute until aromatic
  • Add in sliced carrots and salt. Saute for 3 minutes stirring occasionally.
  • Add in green beans and saute for another 2 min.
  • Add in water and bullion OR broth and bring to a boil. Let boil for 5 minutes.
  • Turn off heat. Pull out the garlic and onion. You don't want to offend anyone with any additional vegetables! Add in cooked pasta. Stir to combine. Enjoy!

Notes

Feel free to add in any other vegetables your kids will accept. For example, potatoes diced into small cubes and added with the carrots would work great!
