Who doesn’t perk up when they hear the word “taco”!? I know I do! I love all kinds of tacos hard shell soft shell, steak, chicken, carnitas, you name it! The taco that often goes under the radar are fish tacos. I love squeezing lime onto a fish taco and taking a bite of the cool slaw and tangy lemon with the crispy warm fish.

“I never used to make fish tacos… UNTIL I had this genius idea…”

I never used to make fish tacos for one reason. I hate frying. I won’t do it. I hate the smell the fry oil leaves in the house and I hate cleaning up all the splattered oil so I resigned myself to a life of eating restaurant fish tacos. UNTIL I had this genius idea… I always stock chicken nuggets and fish sticks in the freezer for the kids. Then one day I thought… what if I used the fish sticks to make fish tacos?! And BOOM there was no stopping me! I can make just a few in the toaster oven or I can feed an army by baking them in the oven!

Fish sticks are already perfectly tortilla sized, they cook in about 15 minutes and they sell so many kinds! Breaded or battered even gluten free! You can use a regular tortilla shell or go wild and use an alternative like Siete Foods tortilla shell or even just a lettuce leaf! They are perfect for a quick weekday “Taco Tuesday” or even a Lenten Friday! Top it with your favorite slaw! You really can’t go wrong.
