There is something about Spring… is it the warmer days? Seeing the trees and plants blossom? Or hearing baby birds chirping from their nests, that always gives me a renewed sense of hope for the coming year. Coming out of the winter cold months, the rebirth all around makes me excited for all that is possible for our longer days together. One of the ways I like to celebrate, to make the most of Spring, is making special treats for the kids. I have the perfect treat to celebrate Spring that I’m going to share with you. They are great for kids to help with, and the best part, have next to no cooking time so you can enjoy more Spring! They’re a great alternative to those rice krispy treats and even pretty enough to sit on top of a spring time cake!

  • 12 oz package Semi Sweet Chocolate Chips *Can sub for Enjoy Life chips for a dairy free version!
  • 1/4 cup Almond Butter
  • 1 package Mini Chocolate eggs with a candy shell ( I use the Cadbury kind)

Instructions

  • In a large bowl, melt chocolate chips with Almond Butter. You can melt over boiling water or in microwave. *If using microwave, heat only 30 seconds at a time, stirring in between to avoid scorching the chocolate.
  • Once Chocolate is melted, add all of the Chow Mein Noodles. Stir to coat.
  • While still warm, spoon the mixture onto a lined baking sheet in little piles, using the spoon to make a little indent for the eggs to lay in.
  • Set chocolate eggs into nests.
  • Allow chocolate to cool and harden at least 30 min in the fridge or 1 hour on countertop.
  • Enjoy!

Notes

Allow chocolate to cool and harden on the Silpat before enjoying. These Chocolate Nests always turn out perfectly cute! They can be enjoyed on their own, or even used as an edible cake topper to welcome Spring or a new baby! They are easy enough for kids to help with too! They are sure to brighten your Spring time tables!

I hope you try it and it brightens up your Spring days! Pin it for later or share with your friends!
