You cannot think of going to Disneyland (or any theme park) without thinking about what treat you’ll seek out first. It’s just part of the experience! While Disneyland remains closed, recreating these Disney treats have been key in bringing Disney magic to our days here at home. The Mickey bar is quite possibly and arguably, the most quintessential treat available in all Disney Parks. Because the kids are dairy free, they have no idea what it’s like to enjoy one. Because I am a rebel, and I would sometimes rather suffer the consequences of my dairy reactions, I do know what it’s like to enjoy one. What the kids do enjoy, are those Frozen Banana’s often sold from the same carts. When creating this recipe, I thought of a mash up of these two treats. I wanted it to have that classic CRUNCH of the crisp chocolate shell, and I wanted it to be creamy, and of course, sweet… I also wanted another use for those bananas that were getting over ripe on the counter that I keep in the freezer! So, I dreamed up this recipe that has ZERO SUGAR ADDED, still just as sweet, creamy, and of course, has that classic crispy crunch that will take you right back to your favorite Disney Park memory!

This Mickey Bar recipe is simple using whole ingredients, I just know you’ll love! To get the actual Mickey shape, I used a silicone popsicle mold from Daiso USA, but even if you don’t have them, you can use any popsicle mold you have! This recipe, in any shape you make it, still makes a delicious treat that is actually healthy!

Ok, I’m going to stop talking now and give you the recipe already!!! Here you go!

Frozen Banana Mickey Bar

A mash up of two favorite Disney Park treats! The Frozen Chocolate Covered Banana and the classic Mickey Bar make way for this Dreamy creamy banana Mickey bar!

Equipment

  • Popscicle Mold
  • Blender

Ingredients
  

  • 2 - 3 Frozen (over ripe) Bananas
  • 1 cup Almond Milk (Vanilla Unsweetened) Any will work just fine!
  • 1/2 tsp Vanilla Extract

Instructions
 

  • Add all ingredients to blender and blend until smooth.
  • Pour into silicone molds and freeze until hard. Minimum 4 hours or overnight.

Notes

When I see bananas getting over ripe on the counter, I throw them in the freezer for smoothies or banana bread. If you don't have any already frozen, take some time to freeze the bananas before making this. Blending the banana's unfrozen, will make the the liquid bubbly and not as smooth coming out of the mold. When popsicle's have hardened dip in chocolate shell! See below for recipe!

Chocolate Shell

This chocolate shell can be used in a variety of frozen treats! It can top your sundae, and makes an excellent crispy crunchy shell just like the classic Mickey Bars!

Equipment

  • microwave

Ingredients
  

  • 1 cup chocolate chips
  • 3 tbsp coconut oil

Instructions
 

  • Put ingredients in a microwave safe bowl and microwave 30 seconds at a time, mixing in between, until oil and chocolate is melted together. About 1 - 2 min depending on microwave.
  • Once melted, pour over frozen treat and enjoy!

Notes

Chocolate can scorch easily, melting 30 seconds at a time and mixing in between can prevent hot spots and burning the chocolate. Once on your frozen treat, the shell will harden and give you a delightful crunchy shell!
